Marc Murphy is the chef/owner of Ditch Plains, an oyster bar and fish shack in the West Village and Landmarc, which offers bistro fare in TribeCa.  Next year he'll open another Landmarc in the Time Warner Center.  Who better to talk about kitchen gear?
